EMERGING INNOVATIONS EPISODE 6 – YACON

Sugar has been one of the factors that hinder many people in achieving a healthy diet. Too much intake of sugar can lead to severe problems like obesity and diabetes. This led people to look for food choices and options that will give them the energy we get from eating sugar while not having the guilt of having its adverse effects on our bodies. Smallanthus conchifolius, also known as Yacon, a tuber most commonly found in the parts of South America, has become a well-known source of “healthy sugar.” Yacon also has many health benefits. For today’s episode, we will be highlighting a study from the University of Southeastern Philippines, a state university located at the heart of Davao City, Philippines. The study is “Effects of Storage Temperature and Packaging Combinations on the Storage Quality of Fresh Yacon [Smallanthus sonchifolius (Poepp.) H. Rob.]”. We will learn directly from one of the proponents of this scholarly study, Dr. Joyce Cenabre-Limbaga, a faculty of the University of Southeastern Philippines – Tagum Mabini Campus.
